Mexican Corn Bread 3

Ingredients:

   3      cups          cornmeal mix
   1      cup           onion -- chopped
   3                    eggs
   1      cup           whole kernel corn -- (drained)
   1      tablespoon    sugar
   2      teaspoons     salt
     1/2  cup           jalapeno -- chopped
   2 1/4  cups          milk
                        peppers
     1/2  cup           salad oil
   1 1/2  cups          grated cheddar cheese -- (mild)
 

Preparation:

Beat Eggs; add milk, oil, meal, salt and sugar. Mix well. Fold in onion, corn, peppers and cheese. Pour into greased pans. (I use small alum. pans, for small loaves) Bake in 375* oven for about 45 minutes. (freezes well)
