Ingredients:

  1         tablespoon  rendered bacon fat
  1                cup  yellow cornmeal
     1/2           cup  flour
  1           teaspoon  salt
  1           teaspoon  baking soda
     1/2      teaspoon  sugar
  2                     egg
  1                cup  onion
  3        tablespoons  jalapeno chile
  1                cup  cheddar cheese
  1                cup  buttermilk
     1/3           cup  corn oil
 

Preparation:

Grease a small skillet with bacon fat, lard, or butter combine dry ingredients in a bowl-mix well in another bowl, combine eggs, onions, chiles, and cheese stir buttermilk and oil into egg mixture-mix well combine egg mixture with dry ingredients-mix well pour into greased skillet bake @ 450 degrres for 20 minutes, until golden serve hot
