Cabbage Casserole

Ingredients:

1         pound         ground beef
1         pound         sausage
1         Teaspoon      salt
1/4       Teaspoon      pepper
1         medium        onion, chopped
1/2                     bell pepper, chopped
2         stalks        celery, chopped
1         clove         garlic, minced
1         can           Ro-tel® tomatoes w/ green chilies
1/4       cup           water
1         cup           raw rice
1         medium        head cabbage, chopped

-----CHEESE SAUCE-----
1/2       pound         Velveeta® cheese, cubed
3         Tablespoon    butter or margarine
1         Tablespoon    flour
1         cup           milk
 

Preparation:

Brown meats together. Drain fat. Add the next 6 ingredients; cook for 5 minutes. Add tomatoes, water and rice; cook 5 minutes longer. Stir in cabbage; cook an additional 5 minutes. Pour cabbage mixture into a large casserole dish. For Cheese Sauce: Melt margarine in saucepan. Add flour, stirring until mixture is smooth. Add Velveeta® and milk; stir until cheese is melted. Pour sauce over cabbage mixture. Cover and bake at 350° F for 1 1/2 hours.
