Ingredients:

  3             pounds  chicken wing
  1                cup  onion
     2/3           cup  scallions
  2          teaspoons  garlic
     1/2      teaspoon  ground thyme
  1           teaspoon  salt
  1           teaspoon  ground allspice
     1/4      teaspoon  freshly grated nutmeg
     1/2      teaspoon  ground cinnamon
     1/4           cup  hot chile
  1           teaspoon  black pepper
     1/8      teaspoon  jamaican hot sauce
  2          teaspoons  soy sauce
     1/4           cup  peanut oil
 

Preparation:

disjoint chicken wings, reserving tips for stock combine remaining ingredients in a food processor process to a very thin puree combine with chicken wings in a bowl, rubbing mixture into wings with your hands (wear rubber gloves) cover and chill for 2-48 hours place wings onto a rack in a foil-lined roasting pan roast @ 450 degrees for 30-35 minutes, turning and basting often serve at room temperature
