Ingredients:

   3      cups          Bread flour
   3      tablespoons   Olive oil
   1 1/2  teaspoons     Salt
   2      tablespoons   Milk
     1/2  teaspoon      Sugar
   1                    Egg w/ 1 T water for wash
     3/4  cup           Water
                        -----FILLING 1-----
   1      pound         Broccoli -- chopped/steamed
   2                    Garlic cloves (minced)
     1/2  cup           Mozzarella (shredded)
   1      tablespoon    Parmesan
     1/2  pound         Provolone (sliced)
   2      tablespoons   Sesame seeds
                        -----OR FILLING 2-----
     1/4  pound         Salami
   1      tablespoon    Parmesan
     1/4  pound         Provolone (sliced)
   1      tablespoon    Poppy seeds
     1/2  cup           Mozzarella (shredded)
 

Preparation:

All ingredients except egg wash on dough setting: 60 minutes to rise after first kneading; punch down for 60 seconds; rest 5 minutes. Preheat oven to 400. Lightly grease 13x9x1 baking pan with oil or line with parchment. On a floured surface, roll dough to 16x12 rectangle. Filling 1: Layer sliced provolone on dough, cover evenly with broccoli. Sprinkle with garlic and cheeses. Roll up as tightly as possible; pinch long seam closed as well as ends. Tuck ends under. Place on prepared pan, seam side down. Brush top with egg wash and sprinkle with sesame seeds. Prick six times with a fork along the top and sides. Bake for 30 - 35 minutes. Cool on wire rack 20 minutes. or Filling 2: Layer salami, provolone; sprinkle cheeses; roll up; egg wash; sprinkle poppy seeds. Bake as before.
