Pineapple Sweet Bread

Ingredients:

                        ***FOR THE SPONGE***
   1      tablespoon    yeast
   1      teaspoon      sugar
     1/4  cup           unbleached white flour
     1/4  cup           warm water
                        ***COMPLETING THE DOUGH***
   3      cups          unbleached white flour
   1      teaspoon      salt
     1/4  cup           sugar
     1/2  stick         {2 oz} unsalted butter -- softened
   2                    extra-large eggs
     1/4  cup           sour cream
   1      cup           {4 oz} dried pineapple -- chopped
 

Preparation:

For the Sponge: Have all the ingredients at room temperature, place them in the bread machine, and program for Yeast Bread Light, or Sweet Bread. Press START and mix for 2 minutes. Press STOP and allow to rest l5 minutes until very foamy. Completing the Dough: Have all the ingredients at room temperature. Add all these ingredients except the dried pineapple in to the sponge in the machine. Press START, reprogramming if necessary, retaining the same program setting. Add the dried pineapple at the very end of the final knead cycle. The finished bread is feathery light with a solid texture. NOTES: This lovely load makes a charming tea bread. Try cutting thin slices and serve with cream cheese or sweet butter.
