Millet Bread

Ingredients:

          small         loaf:
   1      cup           milk
   1      tablespoon    butter -- or canola oil
     1/4  cup           unsulphured molasses
   1      large         egg
   1 1/4  cups          all-purpose flour -- unbleached
   1      cup           millet flour
   1      cup           uncooked oatmeal -- not instant
     1/2  cup           flax seeds
     3/4  teaspoon      salt
   1      tablespoon    vital wheat gluten
   1 1/2  teaspoons     active dry yeast
          large         loaf:
   1 1/2  cups          milk
   2      tablespoons   butter -- or canola oil
     1/3  cup           unsulphured molasses
   2      large         eggs
   2      cups          all-purpose flour -- unbleached
   1 1/2  cups          millet flour
   2      cups          uncooked oatmeal -- not instant
   1      cup           flax seeds
   1 1/2  teaspoons     salt
   5      teaspoons     vital wheat gluten
   2      teaspoons     active dry yeast
 

Preparation:

Pour all wet ingredients into bread machine baking pan. Measure all other ingredients except yeast into baking pan. Sprinkle yeast over dry ingredients, being careful not to get yeast wet. Use rapid bake cycle on your machine for this loaf.
