Lowfat Light Rye Bread

Ingredients:

     3/4  cup           water
   1 1/2  tablespoons   honey
     3/4  teaspoon      salt
     3/4  cup           whole wheat -- (4.1 ounces)
                        flour
     3/4  cup           unbleached -- (3.9 ounces)
                        flour
     1/2  cup           rye flour -- (2.1 ounces)
   2      tablespoons   gluten flour
   2      teaspoons     cornmeal
   1      teaspoon      caraway seeds
   1 1/2  teaspoons     active dry yeast
 

Preparation:

Put the ingredients in the bread pan in the order listed. Reverse the order if the manual for your machine calls for dry ingredients first. Select Basic Wheat Cycle, Light setting (or the equivalent setting for you machine). Press Start Note: Use bread flour instead of the unbleached flour Also, most recipes in this book call for some amount of canola oil, I just leave it out.
