Cheesecake Fruit Pie (Low Fat)

Ingredients:

  1 1/2           cups  low-fat graham cracker crumbs
     1/4           cup  reduced fat margarine -- melted
  3        tablespoons  granulated sugar
                        ***FILLING***
  2               cups  miniature marshmallows -- melted
  2        tablespoons  skim milk
  1                cup  fat-free sour cream
  4             ounces  fat-free cream cheese -- softened
  2          teaspoons  pure vanilla extract
  17            ounces  fruit cocktail in syrup -- drained
 

Preparation:

To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Chill 1 hour, or until firm. Or, bake in a 375 degree oven for ten minutes or until edges are brown. Cool on rack before filling. In a saucepan, heat marshmallows and milk over low heat until marshmallows are melted. Cool ten minutes. In a mixing bowl, combine sour cream, cream cheese, and vanilla extract. Mix until smooth. Stir marshmallow mixture and fruit cocktail. mixtures together. Turn into crust. Chill until set.
