New England Crock-Style Baked Beans

Ingredients:

   1      pound         dry navy beans or
   1      pound         dry great northern beans
   8      cups          cold water
   1      cup           chopped onion
     1/4  pound         salt pork. diced
   1      cup           water
     1/2  cup           molasses
     1/2  cup           packed brown sugar
   1      teaspoon      dry mustard
     1/4  teaspoon      pepper
 

Preparation:

1. Rinse beans. In a large saucepan or Dutch oven bring 8 cups water and beans to boiling. Reduce heat; simmer, covered for 1-1/2 to 2 hours or till beans are tender. Drain beans. 2. In 3-1/2 to 4-quart crockery cooker combine drained beans, onion and diced salt pork. Add 1 cup water, molasses, brown sugar, dry mustard, and pepper. 3. Cover, cook on LOW-heat setting for 10 to 12 hours or on HIGH-heat setting 5 to 6 hours. Stir before serving. Note: if you have a 5 or 6-quart cooker. Double all ingredients.Prepare as above. Makes 12 to 16 servings.
