Italian Roast Beef

Ingredients:

   4      pounds        beef rump roast
   2      medium        onions
   2      cloves        garlic
   1      large         stalk of celery
   2      ounces        salt pork or bacon
 

Preparation:

1. Trim all excess fat from roast. Mince 1 onion, the garlic, and celery and salt pork.

2. Lightly flour roast; rub with the minced mixture.

3. Slice remaining onion place in Crock Pot. Place the roast on onion in the Crock Pot.

4. Cover and cook on low setting for 10 to 12 hours. Serve.
