Tamale Pie

Ingredients:

  1              pound  ground beef
  1                cup  chopped green bell pepper
  1                     chopped onion
  1              clove  garlic -- minced
  16            ounces  tomatoes
  6             ounces  tomato sauce
  12            ounces  canned corn -- drained
  1                can  black pitted olives -- sliced, drained
  1         tablespoon  sugar
  1           teaspoon  salt
  1               dash  pepper
  3          teaspoons  chili powder
  1 1/2           cups  sharp cheddar cheese -- grated
  3               cups  cold milk
  1                cup  yellow cornmeal
 

Preparation:

Brown first four ingredients together. Drain fat and add tomatoes, tomato sauce, corn, olives, sugar, salt, chili powder, and pepper. Simmer 20 minutes until thick. Add cheese and stir until melted. Pour into 9 x 13 pan. Make corn meal topping by heating milk in double boiler, add 1 teaspoon salt and slowly stir in cornmeal. Cook and stir until thick; add 1 tablespoon butter and spread over top of meat mixture. Bake at 375*F for 40 minutes. In meat mixture, for 20 minute simmering time, I added about 1/3 c. cracked wheat and simmer same length of time.
