Pepper Steak With Rice

Ingredients:

   8      ounces        lean beef round steak -- 1/2" thick, cut in
                        -- thin strips
   1      teaspoon      paprika
   1      small         clov  garlic -- crushed
   2      teaspoons     butter or margarine
     1/3  cup           green onions with tops -- sliced
     1/2                green pepper -- cut in strips
   1      small         fresh tomato -- diced
     1/3  cup           beef broth
   1 1/2  tablespoons   water
   2      teaspoons     cornstarch
   2      teaspoons     soy sauce
   1      cup           hot cooked rice
 

Preparation:

Sprinkle steak with parika and allow to stand while preparing other ingredients. Cook steak and garlic in butter until meat is browned. Add onions and green peppers; continue cooking until vegetables are wilted. Add tomatoes and broth; cover and simmer about 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak and cook until thickened. Serve over beds of fluffy rice.
