Ingredients:

  1              pound  lean ground beef -- (85%)
     1/3           cup  egg beaters healthy real egg substitute
     2/3           cup  medium salsa -- divided
     2/3           cup  plain dry bread crumbs
     1/4           cup  diced green chiles or jalapeno peppers
 

Preparation:

Mix ground beef, egg beaters, 1/3 cup salsa, bread crumbs, chilles or jalapenos. Shape into a 6 x 3 inch loaf. Place in lightly greased baking pan. Bake at 350 degrees F for 50 minutes. Pour remaining 1/3 cup salsa over meatloaf. Bake for 10 minutes more. Let stand 10 minutes before slicing. Garnish as desired.
