Filet Mignons With Herb Butter

Ingredients:

     1/4           cup  butter -- room temperature,
                        -- (1/2 stick)
  2        tablespoons  safeway dijon mustard
  2        tablespoons  chopped fresh mixed herbs -- (such as thyme,
                        -- rosemary, basil and
                        parsley)
  4              thick  filet mignon steaks -- (about 6-ounces
                        -- each), (1 inch)
 

Preparation:

Mix butter, mustard and herbs in small bowl to blend. Form butter mixture into log. Wrap in plastic and place in freezer. Prepare barbecue (medium-high heat) or preheat broiler. Sprinkle steaks with salt and a generous amount of pepper. Grill or broil to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to plate. Unwrap butter and slice into rounds. Top each steak with a round of herb butter and serve. Prep Time: 10 minutes Cook Time: 10 minutes Makes: 4 servings To me, filet mignon is still a wonderful special occasion dish.
