Mushroom Tofu Burgers

Ingredients:

  1 1/2           cups  chopped onion
     3/4         pound  fresh mushrooms -- cleaned and sliced
     1/4           cup  chopped red pepper
  1 1/2    tablespoons  chopped garlic
                        fresh ground pepper and salt -- to taste
  1         tablespoon  olive oil
  2             pounds  firm tofu -- drained
  3               cups  quick-cooking oats
  1            package  frozen chopped spinach -- thawed and drained
                        -- (10-oz)
  4        tablespoons  lite soy sauce
  2          teaspoons  italian seasonings
  2          teaspoons  cumin
  2          teaspoons  lemon juice
  1         tablespoon  worcestershire sauce
 

Preparation:

Preheat oven to 350 degrees. In a skillet over medium high heat, saut‚‚ onions, mushrooms, red pepper, and garlic in oil until tender, about 3 to 5 minutes. Season with salt and pepper. Mash tofu in a large bowl. Add oats, spinach, and seasonings. Mix well. Shape into 12 patties and place on nonstick baking sheet. Bake for 20 minutes; flip and bake an additional 10 to 15 minutes. Serve on bun or roll or in pita. Spread with mayonnaise or mustard, if desired. Garnish with lettuce and tomato. 12 servings/Serving size: 1 patty
