Ingredients:

  1              pound  ground chuck
     1/2        medium  onion -- (diced)
     1/2        medium  green or pablano pepper -- (diced)
  1                     fresh hot peppers -- (diced), up to 2
  2             cloves  garlic -- (minced)
  1              pound  Monterey or Pepper Jack cheese
  4             ounces  skim milk
  1         15 oz. can  black beans
  5                     flour tortillas -- up to 6
                        Salt -- pepper, & chili
                        -- powder to taste
 

Preparation:

In a medium sauce pan slowly warm milk and Jack cheese at medium heat. In a large skillet saut‚ garlic and onion. After 2 to 3 minutes add peppers and cover. Cook about 5 minutes. Add ground chuck, season to taste, cover, and cook. In another sauce pan warm beans. After beef is cooked and milk and cheese have formed a thick sauce take warmed tortillas and fill with 1 heaping tbl. black beans, 2 heaping tbl. meat mixture, drizzle a little cheese sauce over meat and fold. Generously cover each burrito with cheese sauce.
