Quick and Cheesy Corn Pie

Serves: 10 inch piecrust
 

Ingredients:

   2      cups          biscuit mix
   2      tablespoons   butter -- melted
     1/2  cup           cold water
     1/2  cup           milk
   4                    eggs
   1      can           cream-style corn (17 oz.)
     3/4  cup           shredded sharp Cheddar cheese (6 oz.)
   2      tablespoons   minced onion
   2      tablespoons   minced green pepper
     1/4  teaspoon      pepper
 

Preparation:

Combine first 3 ingredients; stir until a stiff batter forms. Spoon batter into a lightly greased 10 inch pie plate; spread to form a shell. Set aside. Combine milk and eggs; beat well. Stir in remaining ingredients. Pour mixture into pastry shell. Bake at 375 F for 50 to 55 minutes or until filling is set.
