Quebec Sugar Pie (Tarte Au Sucre)

Ingredients:

                        Pastry dough for an 8 inch pie shell
  1 1/2           Cups  dark or light brown sugar (you can mix
                        light and dark)
  1 1/4           Cups  light cream (whipping cream or
                        half-and-half for a lighter pie)
  2        Tablespoons  flour
     1/4      Teaspoon  pure maple extract
 

Preparation:

Preheat oven to 350 F. Place the unbaked pie shell on a baking sheet. Whisk together all other ingredients and pour into pie shell. Bake until filling is just set, about 25 minutes. Cool on counter, then in fridge (to help it set more) before serving. Can be offered with whipped cream. This recipe doubles well. You can also make miniature tarts with this.
