Ingredients:

  16      Ounce can     solid-pack pumpkin - not pumpkin pie filling
  13      Ounce can     evaporated skim milk
   1                    egg or egg substitute equal to one egg
   2                    egg whites
     1/2  cup           biscuit mix - bisquick now makes low-fat version
   2      tablespoon    sugar
   8      package       sugar substitute
   2      teaspoon      pumpkin pie spice
   2      teaspoon      vanilla extract
 

Preparation:

Heat oven to 350 degrees F. Lightly grease a 9 inch pie plate - or spray with Pam. Place all ingredients in blender, food processor, or large mixing bowl. Blend 1 minute or beat 2 minutes with mixer. Pour into pie pan and bake for 50 minutes or until center is puffed up.
