Pecan Delight Pie

Ingredients:

  4                     egg whites -- at room temp.
  1                 c.  sugar
  1 3/4           tsp.  baking powder
     1/4          tsp.  vanilla
  2                 c.  saltine crackers -- coarselt broken
     3/4            c.  chopped pecans  (I have used walnuts
                        before)
  1 1/2             c.  whipped cream (substitute if wanted) -- (1 1/2 to 2)
     1/4                c.pecans -- chopped (walnuts
  1                can  be used if needed)
 

Preparation:

Whip egg whites on medium speed until soft peaks fors. Con- tinue whipping on medium speed while gradually adding sugar and baking powder. Continue to whip until very stiff peaks form and all sugar is dissolved. Add vanilla and mix thoroughly. Add saltine crackers and pecans; gently fold in by hand. Pour into greased 9-inch pie pan and bake at 325 degree for 1 hour. Remove from oven and cool upside down. When thoroughly cooled, top with whipped cream and sprinlke with chipped pecans.
