Lemon Chess Pie Lowfat

Ingredients:

   1 1/4  cups          sugar
   2      tablespoons   all-purpose flour
     1/3  teaspoon      salt
   2                    eggs -- beaten
     1/4  cup           skim evaporated milk
   3      tablespoons   fat-free margarine -- melted
   1      teaspoon      butter flavoring
   3      tablespoons   lemon juice
   1                    grated lemon rind pie shell -- unbaked
 

Preparation:

You may use egg substitutes equal to 2 eggs in place of the eggs. Sift together sugar, flour, and salt. Melt margarine and add to mixture. Add milk, eggs, flavoring, lemon juice and lemon rind. Pour into unbaked pie shell. Bake at 350 for 45 minutes or until lightly browned.
