Italian Spinach Ricotta Pie

Ingredients:

  1         Tablespoon  margarine
     1/2           Cup  minced onions
  1            Package  frozen chopped spinach -- (10 ounce) thawed
  1          Container  ricotta cheese -- (15 ounce)
  2                     eggs
     1/2      Teaspoon  salt
     1/4      Teaspoon  pepper
     1/4      Teaspoon  nutmeg
     1/2           Cup  grated parmesan cheese
 

Preparation:

Thoroughly drain spinach using hands to squeeze out as much moisture as possible. Melt margarine and fry onion until soft. Add spinach and stir until most of moisture is gone. Remove from heat. In large bowl add all other ingredients to the spinach and stir until mixture looks like green and white marble. Pour mixture into round Pyrex dish. Bake at 350~F. for about 40 minutes or until top is golden and filling is set.
