Preparation:
Add sugar, spices, salt and slightly beaten egg yolks to pumpkin and cook
over boiling water till thickened. Fold in stiffly beaten egg whites, then
cream. Pour into refrigerator tray and partially freeze. Pack into pie
shell. Serve at once.
MAKES 9 inch pie
Cookie Pie Shell:
1 1/2 cups fine crumbs, gingersnaps
1/4 cup sugar
1/2 cup butter, melted
Mix crumbs and sugar together; stir in butter. Line pan with mixture by
pressing firmly into place. Chill 20 minutes or bake in moderate oven
(350=B0) 10 minutes. Cool.
