Fresh Peach Pie - Complete Dessert

Ingredients:

                        prepared pastry for 2-crust 9-inch pie
   8                    peaches
     2/3  cup           light brown sugar -- firmly packed
     1/3  cup           all-purpose flour
     1/2  teaspoon      cinnamon
     1/4  teaspoon      ginger
     1/2  teaspoon      nutmeg
 

Preparation:

1. Line bottom of 9-inch pie plate with pastry. 2. Peel and quarter peaches into medium-size mixing bowl. 3. In another bowl, combine remaining ingredients; mix until well blended. 4. Add sugar-flour mixture to peaches, tossing gently. 5. Pour filling into unbaked pie shell; cover with top crust and prick with fork. 6. Bake in preheated 400 F. oven 10 minutes; reduce heat to 3750 F. and continue baking 50 to 55 minutes, or until golden.
