Best Asparagus Vinaigrette

Ingredients:

  1              pound  fresh asparagus
                        ***DRESSING***
  1         tablespoon  dijon mustard
  2        tablespoons  white wine vinegar
  3        tablespoons  fresh lemon juice
  1           teaspoon  sugar
                        salt & pepper -- to taste
     1/3           cup  vegetable oil
                        lemon zest
 

Preparation:

1. Place asparagus in small amount of boiling water and cook for 2 minutes. Asparagus will turn bright green and should still be crunchy. 2. Remove asparagus and plunge into ice water. When cool, dry and place on serving platter. 3. Place all ingredients in a bowl and whisk together. Pour over asparagus and garnish with lemon zest.
