COTTAGE PIE

Ingredients:

  1              pound  container cottage cheese -- (low fat)
  1                     egg
  1            package  artificial sweetener
  1       20 ounce can  crushed pineapple drained
  1           teaspoon  each
                        vanilla -- lemon juice, and
                        -- coconut extract
  1           envelope  gelatin -- unflavored.
 

Preparation:

Mix the juice from the pineapple, extracts, and gelatin until gelatin is dissolved. (recipe calls for using a blender for this, but I just stir vigorously andit is fine). Once it is mixed, stir in cottage cheese. Press pineapple into the bottom of a glass pie pan and pour mixture over it. Sprinkle with cinnamon if desired. Bake in a 350 oven for 30 minutes. Chill for at least 8 hours before serving. (Especially good for breakfast)!
