Chocolate Cream Pie

Ingredients:

   1 1/2  cups          sugar
     1/2  teaspoon      salt
   2 1/2  tablespoons   cornstarch
   1      tablespoon    all purpose flour
   3      cups          milk
   3      ounces        unsweetened chocolate
   3                    egg yolks -- slighily beaten
   1      tablespoon    margarine or butter
   1 1/2  teaspoons     vanilla
   1      9 inch        pie crust -- baked and cooled
     1/2  cup           whipping cream
   1      tablespoon    confectioners'sugar
     1/4  teaspoon      vanilla
                        shaved nuts toasted coconut or fresh
                        -- berries
 

Preparation:

In saucepan, combine the sugar, salt, cornstarch and flour. Gradually stir in the milk, while heating. Add the chocolate and stir until chocolate melts. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat. Stir a little of the mixture into the egg yolks. Then blend egg yolks into hot mixture in saucepan. Boil 1 minute more, stirring constantly. Remove from heat. Blend in the margarine and vanilla. Cool, stirring occasionally. Pour into the pie shell. Chill thoroughly for 2 hours. Whip the whipping cream stiff, beat in the sugar and vanilla. Garnish with shaved nuts, toasted coconut, or fresh berries. Remove pie from refrigerator 20 minutes before serving.
