Choco Marshmallow Pie (Low Fat)

Ingredients:

  1 1/2           cups  oreo cookie crumbs -- reduced fat
     1/4           cup  reduced fat margarine -- melted
  3        tablespoons  granulated sugar
                        ***FILLING***
  2               cups  miniature marshmallows
  2        tablespoons  skim milk
  1                cup  cool whip free -- thawed
  2               cups  skim milk
  1 1/2           cups  cool whip free -- thawed
  1          6 oz. pkg  chocolate pudding mix
  7             pieces  reduced fat vanilla wafers
 

Preparation:

To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Chill 1 hour, or until firm. Or, bake in a 375 degree oven for ten minutes or until edges are brown. Cool on rack before filling. To prepare filling, in a saucepan, heat marshmallows and milk over low heat until marshmallows are melted. Cool ten minutes. Stir in one cup whipped topping; set aside. In a mixing bowl, combine remaining milk, whipped topping, and pudding mixes. Spoon into crust. Arrange vanilla wafer cookies over pudding mixture. Spread marshmallow mixture over cookies. Refrigerate 4 hours or until set.
