Blueberry Cheese Pie

Ingredients:

   1      package       pie crust mix
     1/2  cup           shredded coconut
   8      ounces        cream cheese
     1/2  cup           sugar
   2                    eggs -- well beaten
   1      teaspoon      pure vanilla extract
   1                    lemon -- juice of
   1      tablespoon    all-purpose flour
   2      cups          milk
   1      can           {1 lb. 5 oz} blueberry pie filling
                        sweetened whipped cream -- (optional)
 

Preparation:

1. Prepare pie crust according to package directions, adding coconut to mix before adding liquid. 2. Line bottom and sides of a 9-inch pie pan with pastry, fluting a high edge. 3. Mash cream cheese until soft; stir in sugar, eggs, vanilla, lemon juice, flour and milk. 4. Beat until mixture is very smooth; pour mixture into pastry shell. 5. Bake in a preheated 325 F. oven 35 to 40 minutes, or until crust is golden brown and filling is set. 6. Cool on rack; top with blueberry pie filling. 7. Chill until ready to serve; garnish with sweetened whipped cream, if desired.
