Applescotch Meringue Pie

Ingredients:

   1      cup           brown sugar
   1      cup           water
   1 1/2  teaspoons     vinegar
   6      large         apples -- pared and sliced
   3      tablespoons   butter
   4      tablespoons   flour
     1/2  teaspoon      salt
   1      9 inch        baked pie shell
                        *meringue*
   2                    egg whites
   4      tablespoons   sugar
   1      teaspoon      vanilla
 

Preparation:

Combine brown sugar, water and vinegar in a saucepan. Bring to a boil. Add apples and cook until tender. Remove apples from syrup and set aside. Cream together butter and flour. Stir into hot syrup and cook until thickened and smooth, stirring constantly. Add salt and fold in apples. Cool. Turn into 9-inch baked pie shell. To prepare meringue, beat egg whites until stiff. add sugar and vanilla and beat until just combined. Spread meringue over pie filling. Bake at 350ΓΈ for 9 - 10 minutes until meringue is lightly browned.
