Apple-Almond Pumpkin Pie

Ingredients:

  1                     unbaked 9-inch pie shell
     1/3           cup  sliced toasted almonds
  1                jar  applesauce      (8oz)
     1/2           cup  brown sugar     packed
  1                tsp  cinnamon
  1                tsp  ground ginger
     1/2           tsp  ground nutmeg
  1                can  pumpkin puree   (15 oz)
  2                     eggs slightly beaten
     3/4           cup  undiluted evaporated milk
                        Whipped cream   optional, for
               serving  
 

Preparation:

Sprinkle almonds in pie shell. Layer applesauce over almonds. In a bowl, mix brown sugar, cinnamon, ginger, and nutmeg. Add pumpkin, eggs, and milk to spice mixture. Combine well. Turn filling into the pie shell. Sprinkle some almonds on top. Bake below center of oven at 400ƒ for 45 minutes or until knife inserted near center of filling comes out clean. Let stand a few minutes. Serve warm or lightly cool with whipped cream, if desired.
