Apple Pecan Pie

Ingredients:

   1                    Unbaked 9" pie shell
                        Filling:
   6      C             Apples, peeled -- sliced
     1/2  C             Light brown sugar
     1/4  C             Sugar
     1/2  Tsp           Salt
   2      Tbsp          Flour
     1/4  Tsp           Nutmeg
     1/2  Tsp           Cinnamon
   1      Tbsp          Lemon juice
   1      Tbsp          Butter
                        Topping:
     1/4  C             Light brown sugar
     1/4  C             Flour
   2      Tbsp          Butter
     1/2  C             Chpd pecans
 

Preparation:

Preheat oven 425 F. Steam apple slices in 1-2T water in a covered saucepan, 5 mins. Remove from heat and add sugars, salt, flour, nutmeg, cinnamon, lemon juice, and butter. Mix well; turn into unbaked pie shell. Topping: Blend sugar, flour, and butter. Sprinkle on top of pie. Sprinkle nuts over pie topping. Cover top of pie with foil; bake 15 mins then reduce temp to 375 F, remove foil; bake 30-40 mins longer. My notes: This is a nice pie. This is the pie the author of the cookbook urged everyone to try.
