Mocha Gingerbread

Ingredients:

  2 1/2           cups  all-purpose flour
  2        tablespoons  cocoa powder -- absolutely level
            tablespoon  
  1         tablespoon  ground ginger
  1         tablespoon  cinnamon
     1/2    tablespoon  nutmeg
  1           teaspoon  ground cloves
     1/2      teaspoon  baking soda
     1/2      teaspoon  salt
     1/2           cup  apple butter
     1/2           cup  molasses
     1/2           cup  honey
     1/2           cup  brown sugar
  1                     egg
  1                cup  strong coffee
  1         tablespoon  ginger -- finely chopped
 

Preparation:

Whisk all the dry ingredients together in a medium bowl. Mix all the liquid ingredients in a large bowl, using an electric mixer if possible because everything should be well blended. Add the dry ingredients to the liquid ingredients about a third at a time, mixing the batter well after each addition. Pour the rich, dark batter into an oiled or greased nine-by-nine cake pan. Bake about an hour at 350ΓΈ, until the gingerbread is nice and fluffy and a toothpick poked into the center comes out clean. Baking this makes the house smell wonderful, too.
