Kentucky Jam Cake

Ingredients:

  1                cup  butter -- softened
  2               cups  sugar
  5                     eggs
  1                cup  seedless blackberry jam
  3               cups  flour -- sifted
  1           teaspoon  baking soda
     1/2      teaspoon  salt
     1/2      teaspoon  cloves
     1/2      teaspoon  allspice
  1                cup  buttermilk
  2               cups  chopped nuts -- optional
  1                cup  raisins
 

Preparation:

Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add jam and beat well. Add sifted flour, soda, salt, cloves and allspice alternately with buttermilk; beat until smooth. Stir in nuts and raisins. Bake in 4 ( 9-inch) layer pans greased and floured on the sides with parchment paper lining the bottom. Bake in 350 degree oven for 35 minutes. NOTES: Other jams may be substituted.
