Grandma Evelyn's Quick Orange Cake

Ingredients:

  2               cups  fisher's blend pastry flour -- sift before

  1                cup  sugar
  3          teaspoons  baking powder
     1/8      teaspoon  salt
  2                     eggs
     1/4           cup  water
     1/4           cup  orange juice
     1/3           cup  melted riverview butter
     1/4      teaspoon  orange extract -- if desired
 

Preparation:

Sift flour, sugar, baking powder and salt together three times. Add remaining ingredients in order. Beat thoroughly 2 minutes. Bake in two greased layer cake tins (9 inches in diameter) in a moderate oven (about 360 F.) 20 to 25 minutes. Spread orange filling between layers. Sprinkle top with powdered sugar or spread with cooked white icing.
