Gingerbread Cake (Low Fat)

Ingredients:

  3               cups  unbleached flour
  4          teaspoons  ginger
  2          teaspoons  cinnamon
  2          teaspoons  baking soda
  1           teaspoon  baking powder
  1           teaspoon  cloves
     1/2      teaspoon  nutmeg
  3              whole  egg whites -- slightly beaten
  1                cup  fat-free buttermilk -- * see note
  1                cup  brown sugar -- packed
  1                cup  fat-free sour cream
  1                cup  molasses
 

Preparation:

Preheat oven at 350 degrees. Prepare a 8-3/4 x 1-3/4" pan with cooking spray and flour; set aside. In a mixing bowl, combine flour, ginger, cinnamon, baking soda, baking powder, cloves, and nutmeg. In another mixing bowl, combine egg whites, buttermilk, brown sugar, sour cream, and molasses. Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan. Bake for 45 minutes.
