Ingredients:

  1              pound  fresh jumbo lump crabmeat -- (or the equivalent
                        -- in other high
                        -- quality crabmeat)
  5             slices  pepperidge farm or arnold white bread
  1              small  egg or 1/2 large egg
     3/4    tablespoon  old bay spice -- up to 1, up to
     1/2    tablespoon  dry mustard
  4                     z heavy cream
  2 1/2         ounces  mayonnaise
 

Preparation:

De-crust and cube bread In a bowl, combine bread and heavy cream and work until it is a loose dough. Add egg, mayonnaise, mustard, 1/2 Old Bar. Combine thoroughly. In a seperate bowl, clean crabmeat to bread mixture. Add remaining Old Bay and combine. Will make 4 - 5 Crab Cakes. Saute in hot oil or clarified butter.
