Chocolate Zucchini Cake 1

Ingredients:

  1              stick  unsalted butter -- softened
     1/4           cup  vegetable oil
     3/4           cup  sugar
  1                     egg
     1/4           cup  buttermilk
  1           teaspoon  vanilla
  3        tablespoons  unsweetened cocoa powder
  1 1/4           cups  flour
     1/2      teaspoon  baking soda
     1/4      teaspoon  ground cloves
     1/4      teaspoon  cinnamon
     1/4      teaspoon  salt
  1                cup  zucchini -- grated
     1/2           cup  semisweet chocolate chips -- (mini)
     1/3           cup  walnuts
  4             ounces  cream cheese -- softened
     1/2         pound  confectioner's sugar
 

Preparation:

Preheat oven to 350. Cream together 1/2 of the butter, the oil, and the sugar; beat in the egg. Add the buttermilk and 1/2 teaspoon of vanilla. Stir in 2 tablespoons of the cocoa, the flour, baking soda, cloves, cinnamon, and the salt. Fold in zucchini, chocolate chips, and walnuts. Pour into well--greased 9 in. round cake pan and bake for 25-30 minutes. Let cool in the pan for 10 minutes, then turn out onto a rack and cool completely. To make frosting: Beat the remaining 1/2 stick of butter, cream cheese, confectioners sugar, the 1/2 teaspoon vanilla, and 1 tablespoon cocoa. Frost the cake when cool.
