  2          teaspoons  baking powder
  2          teaspoons  baking soda
  2          teaspoons  ground cinnamon
     1/2      teaspoon  freshly grated nutmeg
     1/2      teaspoon  ground allspice
  1           teaspoon  salt
  1                cup  oil
  4                     egg
  1                cup  sugar
  1                cup  brown sugar
     3/4      teaspoon  vanilla
  4               cups  carrot
  1                cup  apple
  12                    ice cream cone
 

Preparation:

preheat oven to 350 degrees sift together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt, set aside whisk together oil, eggs, sugars, and vanilla until smooth stir in apple, carrots, and dry ingredients until just blended pour into a greased and floured 9x13x2 baking pan bake @ 350 for 40-50 minutes, until top is firm and sides begin to pull away from pan remove from oven and cool on a rack scoop into ice cream cones frost as desired with cream cheese frosting serve at room temperature
