Ingredients:

  1         Tablespoon  Olive Oil
  1         Tablespoon  Butter
  2              Large  Onions -- Diced
  1                Cup  Tomatoes, Canned -- Chopped
  1         Tablespoon  Tomato Puree
  3             Strips  Lemon Peel
  4               Cups  Chicken Stock
                        Salt And Pepper -- To Taste
  1         Tablespoon  Sugar
  1         Tablespoon  Parsley -- Chopped
     1/4      Teaspoon  Thyme
  1           Teaspoon  Basil
  1         Tablespoon  Parsley -- Chopped For Garnish
  1         Tablespoon  Basil -- Chopped For Garnish
 

Preparation:

Heat oil and butter in a large skillet. Add the onions and cook until tender. Add tomatoes, tomato puree, lemon rind, stock, salt pepper, sugar and herbs. Bring to a boil over medium heat. Reduce heat and simmer until tomatoes are tender, about 30 minutes. Puree in batches in a food processor. Taste and adjust seasonings. Serve hot, garnished with chopped parsley and basil.
