Preparation:
combine beans and water to cover in a stockpot, over a high flame bring to a boil and simmer for 2 minutes remove from heat, cover, and let stand for 60 minutes drain, rinse in cold water, and drain well add water just to cover and place over a moderate flame bring to a boil and simmer until most of the liquid has evaporated add water just to cover and simmer to reduce liquid by half add remaining ingredients-mix well bring to a boil, reduce heat, and simmer until beans are tender remove 1 cup beans, mash, and return to the pot heat and stir until thickened serve hot |
