Preparation:
Stir apples, onions, carrots, raisins, garlic and butter together in lg pan over med-high heat till onions are limp, about 5-6 min. Add curry powder and flour and stir well. Stir in broth. Stir over high heat till boiling, then reduce heat and simmer, stirring occasionally, till carrots are tender, about 20 min. In blender, whirl soup till very smooth. Return to pan and add cream if desired, stirring often, over med heat till hot, about 4-5 min. Ladel into bowls and and salt and pepper and chutney to taste. |
