Pumpkin And Coconut Soup (Cold)

Ingredients:

  15             grams  butter
  1              clove  garlic -- crushed
  500            grams  pumpkin -- chopped
  4               cups  water
  1           teaspoon  vegetarian bouillon
  150            grams  coconut cream
 

Preparation:

Heat butter and garlic in saucepan (or microwave on HIGH 1 min.). Stir in pumpkin, water and stock, bring to boil, cover, and simmer about 30 mins. (or microwave about 20 mins. on HIGH). Cool. Blend until smooth, place in large bowl, stir in coconut cream, chill several hours before serving. This can be frozen.
