Preparation:
1. Wash beans thoroughly. Place in a large pan, cover with water, add 2 T. salt and soak overnight.
2. Drain. Add 2 qts. water, 2 large ham hocks, about 1/.2 pound ham and bring to a boil.
3. Reduce heat and simmer 2-2 1/2 hours, stirring occasionally.
4. Then add: onions, tomatoes, chili powder, lemon juice, garlic, chervil, and salt and pepper. Simmer another 30 minutes. Best if made ahead. |
