Mexican Avocado And Chile Gazpacho

Ingredients:

  2                     ripe avocados -- preferably haas
  8             medium  tomatoes -- peeled, seeded,
                        -- finely chopped
  1              clove  garlic -- minced
  1              small  onion -- minced
  3                     canned chipotle chiles in adobo sauce -- rinsed,
                        seeded -- minced
  2                     limes -- juice of
  1                cup  ice water
                        salt and freshly ground pepper
 

Preparation:

Peel the avocados and chop them into pieces roughly 1/4 inch on each side. Toss the chopped avocados with the tomatoes. Crush the garlic into a paste on a cutting board and stir into tomato mixture. Stir in the remaining ingredients and add salt and pepper to taste. Serve chilled.
