Leek, Shallot, And Garlic Soup

Ingredients:

  2          teaspoons  olive oil
  2              large  leeks -- white part only
                        -- rinsed and sliced
                        -- into very thin
                        -- rings
  4              large  shallots -- minced
  4             cloves  garlic -- minced
  1                cup  dry white wine
  5               cups  low-sodium low-fat beef -- or chicken broth
  1                     bay leaf
  1           teaspoon  dried basil
                        fresh ground pepper
  1               dash  salt -- optional
 

Preparation:

Heat the oil in a stockpot over medium-high heat. Add the leeks, shallots, and garlic and saut‚‚ for 5 minutes. Add the wine, broth, bay leaf, and basil and bring to a boil. Lower the heat and simmer for 20 minutes. Remove the bay leaf, season with pepper and salt, and serve. 6 servings/Serving size: 1 cup
