Hearty Vegetable Beef Soup

Ingredients:

  1 1/2         Pounds  ground meat
  1 1/2           Cups  chopped onion
  2               Cups  cubed raw potatoes
  2               Cups  sliced raw carrots
  1 1/2           Cups  diced celery
  1                Cup  shredded cabbage
  1                Can  tomatoes -- (28 oz.)
     1/4           Cup  raw white rice
  2                     bay leaves
     1/2      Teaspoon  dried thyme
     1/4      Teaspoon  basil
  5          Teaspoons  salt
     1/8      Teaspoon  pepper
  1 1/2         Quarts  water
     1/2           Cup  barley
 

Preparation:

In large kettle cook ground beef and onion til brown. Drain off grease/fat. Add potaotes, carrots, celery, cabbage, tomatoes. Bring to boil and add rice and bay leaf, thyme, basil, salt, pepper, water. Simmer til done. Exact mesaurment of vegetables is not importand and a bit more never hurts, especially tomatoes. If too thick for your taste, add a can or two of beef bouillon, stock, consomme or more tomatoes or water.
