Hearty Turkey Noodle Soup (Low Fat)

Ingredients:

  4               cups  turkey light meat -- cooked and cubed
  3             quarts  water
  2             pieces  chicken bouillon cubes
  1              clove  garlic -- minced
     3/4      teaspoon  thyme
  1           teaspoon  parsley
  1           teaspoon  salt
     1/4      teaspoon  black pepper
  3               cups  carrots -- sliced
  2               cups  celery -- sliced
  1                cup  onions -- chopped
  12            ounces  no yolks egg noodle substitute -- cooked
 

Preparation:

In a stock pot, combine turkey, water, bouillon cubes, garlic, thyme, parsley, salt, and black pepper. Cover and bring to a boil over high heat. Reduce heat to low and simmer fifteen minutes. Add carrots, celery, and onions. Simmer 45 minutes more, or until vegetables are tender. Add noodles and stir until combined.
