Groundnut Soup

Ingredients:

                        nonstick cooking spray
   1      cup           chopped onion
   1      cup           chopped celery
   2                    garlic cloves -- minced
   7      cups          fat-free chicken broth
   1      cup           uncooked instant mashed potato flakes
   1      cup           shredded cooked chicken breast
     1/3  cup           reduced-fat creamy peanut butter
     1/2  teaspoon      salt
     1/4  teaspoon      crushed red pepper
     1/2                cu evaporated skim milk
     1/4  cup           sliced green onions
 

Preparation:

Coat a Dutch oven with cooking spray; place over medium-high heat until hot. Add onion, celery, and garlic; saute 3 minutes. Add broth and next 5 ingredients; stir well. Cover; reduce heat. Simmer 25 minutes. Remove from heat; stir in milk. Ladle soup into bowls; sprinkle with green onions.
